  • Boot Camp

    This session encompasses the essentials of “how to cook”.  Perfect for beginners, this course can also aid accomplished cooks in framing their culinary skills.  We cover:  knife skills, preparing dishes using every major cooking technique & plating your masterpieces.  Each day we’ll craft a delectable meal with an approachable dessert with these new techniques.

  • La Patisserie

    What could be more delightful than 3 delectable sessions of French pastry making? Each day we’ll produce at least 2 mouthwatering sweets to amuse your taste buds, including these amazing French classics: crème brûlée, macarons, crepes & profiteroles. Oh la la!

  • Guide to Sauces

    Delve into the world of Escoffier & the 5 classic mother sauces, forever associated with French cuisine.  We’ll also cover “modern day” sauces to round out your training.  Guests will prepare several different sauces each session along with the dishes that will accompany the sauces served during the daily meals.

  • Effortless Entertaining

    Take your entertaining skills to the next level as we create innovative meals with multiple courses.  We will kick off the course with 2 hours of knife skills instruction.  Then, each day there will be two sessions, a prep session in the morning & a cooking session just before (& perhaps during) dinner.  Learn the art of plating & how to make dishes in advance.  Dishes will modified for seasonality, but will include seafood, local meats & produce, as well as dessert. 

  • French Classics

    Mastering the Art of French Cooking (vol 1, Julia Child & Simone Beck) was the first comprehensive English guide for French cooking — & it’s now over 60 years old!  Of course, the allure of delectable French food continues.  In this course, we will prepare 3 classic meals, with desserts, using the finest local French ingredients – dishes will be tailored for seasonality.
