The (Almost) Mrs. C’s Lemon Knot Cookies

First, I’d like it to be VERY clear…this post & this recipe are in honor of Mrs. C. Unabashedly. And, of course, there is a story. A dear friend, I’ll call him John (well, his name actually IS John), for years hosted a spaghetti party with his wife Karen in their basement. It was a very special thing to be invited. And, it was delicious, fun, full of laughter, games of quarters & at the end, the MOST sublime lemon knot cookies EVER. Like, you could eat 12 of them yourself, kind of delicious. And, they were made with infinite love by John’s lovely Italian mother. She was elusive, however, when it came to the recipe. I tried & tried each year to get the deets, to no avail. Then, one year, she gave me 2 hints (I think to appease me). So, I experimented in my kitchen & this recipe emerged. I can’t be entirely sure that it’s the REAL recipe, but what I can be certain of is that I could easily still eat 12 of them in one sitting! So, Mrs. C, in memoriam, this post & recipe are thanks to you. I am forever grateful - I relish the cherished & sweet memories.
