Tartiflette

Oh my, tartiflette! I have a love affair with potatoes & cheese. A new friend here in France casually mentioned this delicious dish, tartiflette, one evening while we were having tea. It’s basically au gratin potatoes on steroids. Each layer has potatoes, followed by an onion/bacon/cream mixture. Then, over the top they place a special cheese called reblochon, which has a slightly more powerful flavor than brie, in a good way. Once we knew of this dish, we had to try it, so this was our first attempt & boy was it delicious. If you can’t find reblochon, I’d suggest brie. 12 stars, highly recommend.
