The 101's

Adapted from one of Chef Denise’s popular class series, this course provides an in-depth view of meats (chicken, beef, & pork), seafood (fish & shellfish) & vegetables.  Included is an extensive discussion of culinary techniques properly adapted to different cuts of meat, seafood & vegetables.

While all classes are tailored to the season (& available ingredients), example dishes might include: grilled lemon herbed chicken breasts, grandma’s pot roast, asian marinated grilled pork chops, chili & tomato pan braised fish, steamed mussels in white wine, sautéed garlic greens & char roasted lemon vegetables.

minimum of 3 guests – maximum of 6

Please anticipate a 4 night / 5 day timeframe: arrival date (afternoon), 3 full days of classes, & departure date (morning). Class includes 5 days of hands-on instruction (with recipes), lodging, & meals. Guests are only responsible for their own dinner on the arrival date.
